You think you have found your perfect cuisine but are you ready to start your own street food business or food truck ? Here are our Top Five tips to set you on the right path...
1. RESEARCH
There may be lots of amazing street food and food trucks out there in NZ but there is always room for great new ideas, new cuisines, a fresh spin on an old classic. Make sure you eat your way through the best street food out there as part of your market research and understand how the top vendors and food trucks operate. Consider if your food is good enough to compete and you are filling a gap in the market. If you can test your food in a real setting - not just friends and family.
2. DITCH THAT LARGE MENU
Keep your menu brief. Do 3 things and do them well, really well. Trust me, you will not have time to send out 16 different dishes and too much choice just slows it all down.
3. SPEED OF DELIVERY
How practical is it to produce your food in a street food or food truck setting? Think about the speed of delivery that is required and the expectations of customers. Think how you can prepare in advance for each service and the equipment you will need for prep and delivery. Remove menu complexity – this is street food.
4. DO NOT FORGET THE PAPERWORK
Yep, it's a pain in the.... and not cheap but it has to be done. Before you start make sure you have registered with your local council for the Food Control Plan or equivalent and have your Food Hygiene Certificates in order. 5. BUILD YOUR ONLINE PRESENCE BEFORE YOU LAUNCH
Make sure you spend time on your online presence and get some great food photos or videos to start you off.
